I love making soup. It's just so... easy. (Thanks to the availability of good pre-made broth at the store. I plan to tackle making broth sometime this year, but one thing at a time.)
The basics are simple. Cook the veggies, add the broth, and whatever grains. If you're going to use spices, put them in a tea ball so you can get keep them separate. This last one is pretty important, especially if you plan on storing the leftovers. Things like black pepper can continue to add flavor to the soup, and while it's not necessarily going to taste bad after stewing in the fridge for a day or two, it's not necessarily going to taste good, either, so being able to take the flavoring spices out as part of the process is key.
In this case, I thin sliced a few stalks of celery, sliced some leeks lengthwise and then chopped 1/4" pieces from there, and cut up an onion. Sizzle sizzle sizzle for about 8 minues on medium heat in some oil, and we're ready to go. I poured in a quart and a half of chicken broth, 1/2 cup of wild rice, 1/2 cup of a brown rice medley from Trader Joes, and 1/3 of a cup of barley. No salt, no seasoning, just the veggies, grains and broth. For the vegetarian crowd, you can use veggie broth instead... the rest of this improv dish is veggie friendly, and it's basic enough to be easy.
Bring to a simmer, and keep it there for 35-40 minutes.
I was using an oval roasting pot that my little sister bought me a few years ago, and one of the interesting things about the shape is that you can rotate the lid to vent off as little or as much of the steam as you want, unlike a regular circular pot. I don't think it's really a precise adjustment for maintaining a slow simmer, but it's nice to be able to vent just enough steam that the whole thing doesn't start boiling over.
Other trivia about this particular pot, Ariel loves teasing me about it. Why? Because it's Rachel Ray branded cookware. Why is that funny? Well... once upon a time, I'd put Rachel Ray on my list of 5. Ariel just couldn't wrap her mind around that one, and laughed at me about it for days. Shortly thereafter, I received this pot. So, to this day, it still puts a smirk on A's face.
Another benefit of making soup... there's time to stop, clean up a bit, and diminish the pile of after dinner dishes. (note the finished meal sitting on a CLEAN butcher block...) Once I was done with the cleaning, I still had time to get going on the sandwiches part. The general idea is an open-face grilled cheese... or maybe it's just over-grown crostini. Either way, it was mighty fine, and the salty savory crunchy cheese and toast thing went very well with the soup.
I grated some gouda and some other cheese, (gruyere is also wonderful for this) and packed it onto the top of some store-bought 'tuscan' bread. (Basically, fancy white bread with rubbery gluten and bog holes for the cheese to melt through.) I put that on the top rack in the oven with the broiler on high. You have to pay attention while the broiler is on, though. The first couple of minutes are pretty uneventful: the cheese starts to melt and bubble, and the grease puddles on top. Yum. The next minute or so the grease soaks into the bread, the bubbling picks up a bit. After that, things start to settle down, and it's important to grab the tray just after the cheese begins to brown. It's possible to actually watch the brown parts form and start to spread... and if you're not watching, it's possible to miss all of this completely, and end up with burned cheese on burned bread.
By the way, if you look closely at the picture, you can see that the back left corner of the cookie sheet is warping upwards, and the whole thing is starting to look like a pringle. It's not a trick of the light, that's actually what was happening. Don't be alarmed if this happens to you... there's something about being that close to the heating element that makes for some interesting thermal expansion issues. Once it cooled off it settles back down.
I still had time after this to clean up the stuff I used to make the grilled cheese before serving dinner. So all we had left to wash were two bowls, two plates, and the soup pot. Not too bad.

Simple pasta and steamed veggies
It's pretty impressive that this dish hasn't made it on here already. I chalk it up to the effect that this blog has had on our kitchen. I'm trying a lot of new things and cooking a lot of new recipes. And writing about it, of course.
This is a quick and simple dinner that we've been enjoying for years. It was something I threw together one night out of sheer hungriness and a need for FOOD. While it's very simple, it does require a steamer basket that nests into the top of your regular saucepan, and use the same lid. It's not hard to find a setup like this when you're shopping for pots and pans. And I recommend the combination to people precisely because of this recipe. It's a serious production time saver.
Step 1: Chop up some vegetables into bite-sized hunks and throw them in the steamer basket. For this recipe, I used 2 heads of broccoli, a bundle of asparagus, and an onion.
Step 2: Fill the pot 2/3 with water. Don't overfill, as the steamer does take up some space in the saucepan, and it will displace the water onto your stove. (Note paper towel on the stove)
Step 3: Put the steamer on top of the pot, and the lid on the steamer.
Step 4: Turn on the stove and heat up the water for pasta.
Step 5: Throw in the pasta, and cook.
Step 6: Take the stack to the sink, and dump the pasta on top of the veggies in the steamer to strain.
Step 7: Dump the steamer into the serving bowl.
Step 8: Drizzle olive oil over everything, and move the pasta around enough to let the oil keep it all from sticking together. Serve with Salt, Pepper, and maybe some Romano or Parmesan.
As the water heats up to boiling, it warms up the veggies, and they steam while the pasta's boiling. When the pasta's done, the veggies are done. No muss, no fuss.
It's really amazing what the simple combination of oil, salt, and pepper can do for steamed veggies. And the cheese is salty enough to chime in pleasantly. Years ago I used to mix in goat cheese and cream and other stuff. But I've been trying to eat better lately, and I have to say, in this case, simpler is really better.
There are other veggie combinations thatare worth trying, like:
-zucchini, chick peas, and shallots
-Broccoli, Cauliflower, and summer squash
-Red peppers, spinach, black beans, and apples
-Use your imagination. Vegetables are vegetables, and some mix better than others, but almost all are good.

A few of my favorite things
I just wanted to make a quick post, to sing the praises of a few things that have made this kitchen a pleasure to cook in, instead of the nightmare that it could have been.
Pot racks. I don't know how I would have survived this kitchen without them. I bought them simply because I have too many pots and pans to store easily. I still have too many, but this floating row of hooks also shines in keeping frequently used tools close at hand. A utensil holding jug or other contraption would have taken up counter space that we don't have, and not been as easy to use. (I know, we used to use one.) The usual suspects are also not in the drawer at the other end of the kitchen, where they'd be less accessible in a hurry. Instead, they're within arm's reach of the stove, where they're most useful.
Similar argument for my magnetic knife block. This particular model is made by a company named Bench Crafted. I like this particular knife holder for two reasons: It's not a big block that takes up counter space, and the surface is made of wood... so it's not going to beat the crap out of my nice, sharp knives when the magnets take hold and slam the blades in.
The food processor. It's amazing how much I'd forgotten how useful this thing was. I think I'd kept it in the cabinet for most of the last 7 or 8 years. I bought it 13 years ago when I lived in Houston, and put it away when I moved up here. I think I really started putting it back to use when I started this blog, and I gave it a designated home on the kitchen island. I'm not sure if I'm cooking more new recipes because I have the food processor at hand, of if I'm using the food processor more because I'm cooking more new recipes. Lately it's been put to use with chick pea burgers, chopping and slicing and mixing ingredients for spaghetti sauce, numerous kinds of hummus, batter for German Apple Pancakes, cabbage and onion dishes, and on and on. It's been a reliable workhorse. Don't get me wrong, I love using my kitchen knives. But the truth is, the food processor does the same job, in less time, using less space, and without needing to transfer the ingredients from board to bowl. My only real complaint is that it's not a full sized, 14 cup model. If I was regularly cooking for more than just the 2 of us, it might be more of an issue. But for now, it's just fine.
And last but not least, the unsung hero that I've been able to take for granted for years. The kitchen island. I originally found it abandoned in the basement of an apartment that I was living in a few years ago. I added wheels, I think. And I definitely added the butcher block top. 24x30 is pretty much all the room I really need for most food prep, bread making, and so on. If I'm cooking for 9 or 10 people, I'll need a little more space, but not much. There's enough storage in the bottom to hold a lot of pots and pans and 'stuff.' I've been using this thing for almost 8 years now, and I haven't really felt the need for something bigger. After almost a decade, something newer and a little bit nicer might be nice. That notion was put in my head while building a much nicer one (sans cabinet) for my in-laws over the summer... but that's not the same thing as actually needing one. This particular detail in my kitchen is like any other well-executed detail: it serves its purpose cleanly, without calling attention to itself. It works well enough that I never notice it. In my mind, that's the ideal when you're working in the kitchen: Usually when you notice something, it's because it's not working, or not as well as it should.
One small detail about all of these things... they're all within arm's reach of the stove. In essence, I have everything I normally need, right where I need it. That makes a huge difference in everything.

Rapid-Fire Salad
I've been a woodworker for a few years now, and in the woodworking world, there's a split between machine woodworking and hand-tool woodworking. And somewhere along the way, I realized there was a similar thing at work in the kitchen. (Woodworking has really colored the way I see a lot of things.)
In short, machines are used for sheer productive capacity. Hand tools are used when a little bit of finesse is desired, when the quantity called for doesn't justify cleaning an entire machine, or when you feel like taking your time and enjoying the process. I like the process of breaking things down and slicing ingredients... there's something for me about working with my hands that allows my head to unwind itself a little bit.
When it's time to produce, one of my favorite machines is the food processor. I don't have a full-sized one, yet, but I've had this mini Cuisinart for something like 13 years now. It's still going strong, and despite it's size it's a solid workhorse. The only hand tool required with a food processor is a knife, to trim off any undesirables, and break the rest down into manageable chunks.

Growing up, the typical salad involved large chunks of lettuce leaf, raw tomatoes, oil and vinegar, and other large chunks of raw vegetables that are the typical anathema to a bouncing screaming holy terror of a child. So I grew up hating the idea of salads in general. I've grown up a bit, and my ideas of what can possibly constitute a salad have been broadened considerably. Among other variations, I was introduced to the concept of so-called 'Israeli Salad,' which is synonymous with "doesn't have lettuce." For some reason, this really appeals to me, and it really opens up the genre to a lot of possibilities.
There are times when I feel like making a really fancy-looking salad, and I'll take the time to carefully slice ripened pears on top of an arranged bed of... whatever... and add nifty things like nuts, craisins, and cheeses, and so on, and so forth. That takes time, room to spread out and prep all the ingredients, and at least a mild level of engagement. Tonight I was just hungry.
I fed some celery, apples, carrots, and red cabbage into the Cuisinart. I mixed up the result, dumped some of it on top of a pile of spinach, added some craisins and balsamic vinaigrette, and called it dinner. I used the slicer on the celery and apples, and the shredder on the carrots and cabbage.
Please note that this processed part of the salad is very dense. Carrots and Cabbage are serious roughage, and shredding it will help with the process of digestion, but it also allows it to compact very tightly in the salad bowl. So be aware that what you see in the picture above is going to last for at least 2 or 3 meals, and attempting to eat all of it would be the gastronomical equivalent of eating a box of brillo pads.
Normally for salads I like to use pears, if I have them, instead of apples. Pears are sweeter, and I like the way that the sweetness counter-balances the bland earthiness of most lettuces and some other vegetables. I also like combining pears with something like gorgonzola in a fancier salad, but I'll make one of those at a later date.
